Altered States - Dude! I think this is the mother of all dream state films. If you haven't seen it, rent it soon. John Hurt is a scientist conducting sensory deprivation experiments in isolation chambers. More hallucinatory that dreaming. The concept follows the idea that the mind needs and will actually create experiences when removed from stimuli. Thus have "waking dreams while totally conscious".
Dreamscapes - Trippy lucid dreaming film. Any dream warrior needs to check this movie out. Complete with "tandem" dream states with Dennis Quaid.
Brainstorm - Ever want to watch somebody else's dreams? A dream recording device gets into the wrong hands. Christopher Walken.
Dream a Little Dream - ok, ok. I know its a 1980's Corey Feldman movie. Nonetheless, a good concept. Elderly man wants to live forever in a dream state with the love of his life. It's a little cheesy, but explores concept of what "consciousness" is.
NOTE FROM SIMON: Well, as long as we are on that "questioning reality as a dream" kick, we may as well throw in Total Recall (I'm sorry) and The Matrix...
